Our soba
JR松江駅の南、雑賀町の通りに面した小さな手打ちそばの店です。出雲そばを、二八そばと十割そばのどちらかでお選びいただけます。
A small hand-made soba shop on a street in Saiga-machi, south of JR Matsue Station. Every Izumo soba comes in 2:8 or 100% buckwheat – your choice.
東風（こち）は、松江市雑賀町で手打ちの出雲そばをお出ししている店です。店先の看板の「手打ちそば」の文字と、「東風」の木の看板が目印です。
そばは、つなぎを少し加えた二八そばと、そば粉だけで打つ十割そばの二種類をご用意しています。お品書きの多くはどちらでも選べますので、食べ比べもお楽しみください（ざるそばとかけそばは二八のみです）。
冷たいそばは割子そば、ざるそば、おろしそば、とろろそば。温かいそばは、ゆで湯ごと器に移す出雲のかまあげそばを中心に、かまあげとろろそば、かまあげ風の磯のりそば、かけそばをご用意しています。割子は一枚から追加できます。
お酒は島根と鳥取の地酒を中心にそろえ、出雲のそば焼酎もございます。そば焼酎はそば湯割りがおすすめです。
Kochi serves hand-made Izumo soba in Saiga-machi, Matsue. Look for the 手打ちそば sign and our carved wooden 東風 name board.
We make two kinds of noodles: 2:8 soba with a little binder, and 100% buckwheat soba. Most dishes come in either, so you can compare (zaru and kake soba are 2:8 only).
Cold soba includes warigo, zaru, oroshi and tororo soba; hot soba centres on Izumo-style kamaage soba served in its cooking water. To drink, we keep mainly Shimane and Tottori sake, plus an Izumo buckwheat shochu that we recommend mixed with soba-yu.

Signature dishes
Warigo soba
出雲そばの代表的な食べ方で、朱塗りの丸い器を重ねてお出しします。薬味をのせてだしをかけ、残っただしは次の割子へ。二八・十割からお選びいただけ、割子は一枚から追加できます。
The Izumo classic: soba set out in a pile of round red lacquer bowls. Top each bowl with condiments and pour on dashi, then tip what is left into the next one. Choose 2:8 or 100% buckwheat; extra bowls can be added.
Cold kake soba with sudachi
冷たいかけつゆのそばに、薄切りのすだちを一面にのせた一杯です。

Warigo soba with duck rice
割子そばに、鴨をのせた小さなご飯を添えた組み合わせです。

Kamaage soba
ゆでたそばを、ゆで湯ごと器に移した出雲ならではの温かいそば。とろろをのせたかまあげとろろそばもございます。

Can I choose 2:8 or 100% buckwheat? Yes, for most dishes, including warigo, oroshi, tororo and kamaage soba. Zaru and kake soba are 2:8 only.
